BAKING PROGRAM

Come and join us this year enjoying 13 hours of intense baking and discovering bakers’ best kept secrets.  Work with a 60 year old starter, creating amazing breads, focaccia, pizza, bioche, croissants, puff pastry and more! DATES April 27th/30th May 4th/7th May 11th/14th May18th/21st May 25th/28th June 1st/4th June 8th/11th June 15th/18th June 29th/ July/2nd September 7th/10th September 14th/17th September 21st/24th September 28th/October 1st October 5th/8th October 12th/15th October 19th/22nd October 26th/29th PRICE $ 1990 per person WHAT IS INCLUDED IN THE PRICE The bread course runs every week starting from the week of April 26th until the end of June and then again in September until the end of October, and can be taken alone ( 4  hours every afternoon) or in conjunction with the regular program ( working in the morning AND baking in the afternoon) WHAT IS INCLUDED IN THE BREAD COURSE
  • Transfer from Pisa airport or train station to the school on Monday morning and from the School to Pisa airport or train station on Thursday morning
  • Breakfast, Lunch and Dinner and Wines/Beer/ coffe/tea (with lunch and dinner)
  • Bedroom with self contained bathroom
  • 13 hours of lessons
  • One jar of our 60 yrs old starter
SCHEDULE Each student will make their own recipes from scratch (breads, focaccia, pizza, puff pastry, rolls, baguette, doughnuts, breafast quiches and pastries, brioche, croissants and generated recipes) they will be given ingredients and equipment in order to produce every item. Recipes will be provided at the end of the week. Arrival on Monday morning Lunch will be served at 1:15 PM From 3:00 PM to 7: 00 PM hands on Lessons At 7:30 pm Dinner Tuesday morning Breakfast 1:15 PM Lunch From  3:00 PM to 7:00 PM Lessons At 7:30 Dinner Wednesday morning Breakfast 1:15  Lunch From 3:00 PM to 7:00 PM Lessons At 7:30 PM Dinner Thursday morning Breakfast and Transfer to Pisa airport/train station In case you decide to take this course in conjunction with the regular program ($ 2,990 per person based on double occupancy), where you arrive on Sunday and depart on Saturday morning, your price will be $ 3,990 per person THE PRICE INCLUDES Transfer from Pisa airport or train station to the school on Sunday and Transfer to Pisa airport or train station on Saturday morning ( if your departure is before 8:00 AM from the school, we will help you arrange a cab. This service is not included in the price. The driving distance from the school to the airport is approx. 25 minutes with no traffic. Reminder: you will have to be at the airport 2 hours prior to your flight) All your meals ( Breakfast, Lunch and Dinner every day), Wines/Beer/Coffee/Tea with Lunch and Dinner. All Tastings: Wine, Truffle, Cheese. A 3 hour cooking lesson in the morning and a 4 hour baking lesson in the afternoon from Monday through Wednesday. Truffle hunt with dogs and hunter on Thursday morning followed by a truffle based lunch, a 3 hour cooking lesson in the afternoon. All lessons are hands-on. A 3 hour cooking lesson on Friday, tour of San Gimignano the afternoon. We HIGHLY recommend Trip insurance as we never cancel any classes, even if we have 1 student attending.
