You arrive on a Sunday and are welcomed with a traditional Tuscan lunch. The remainder of the day is yours to settle in, explore the estate, swim , ride a bicycle or just relax while waiting for dinner to be served.

Monday though Friday you will have continental breakfast at 9,15 AM then lessons promptly start at 10,00AM.

Our lessons are hands on, taught in an air conditioned teaching room, and generally go from 3 to 4 hours. Classes are small and make use of all-natural, seasonally-fresh ingredients from our garden: farm to table! Essential Tuscan techniques you will master include: fresh homemade pasta, raviolis, gnocchi, pizza, bread, focaccia, risotto, bruschette and crostini, roasted meats, fish and meat preparation, pastry dough and desserts, biscotti, ice creams and sorbets, vegetable and grain soups, sour dough and breads…..and much more!

Prices are based on double occupancy and include accommodation, all meals with excellent wines, lessons, tours, airport or rail transfers (from Pisa airport or Pisa Railway Station), taxes.. There are no hidden costs or additional expenses. For those arriving and departing from Florence, please inquire with us as we will direct you to a private driver

Accommodation – Participants stay in the grounds of this 17th century villa where Giacomo Puccini, the famous opera composer, used to spend long periods of time hunting and fishing. All bedrooms have self contained bathrooms and are air conditioned. Private apartments are available upon request and based on availability.

Bicycles are available to all guests at no extra charge. Horse riding lessons are available for an additional fee as well as fly fishing lessons with Moreno Borriero www.mbrods.it, an amazing instructor!

Non-Cooking Guests – We welcome friends and spouses who would like to come without taking part in the cooking program. Their price includes everything but the cooking part of the program.

Amenities – all bathrooms are en suite and hairdryers are provided in each bathroom. Washing and drying machines are available for a small fee. Free WiFi is available at the school. Single bedrooms are available for an extra fee.

A US$ 600/Euro 600 non-refundable deposit per person is required at time of registration with balance due no later than 90 days before the start of the course. The school reserves the right to cancel the booking if the balance is not paid 90 days before the course starts.

All bank charges must be included in your payment if you make a bank transfer. Your course is guaranteed once the deposit has been received. For clients coming from Canada, payment must be with a money order in US dollars.

Toscana Saporita Tuscan Cooking School reserves the right to cancel any course for any reason. If a course is cancelled, all monies will be refunded and such refund will release Toscana Saporita from any liability. In order to cancel your registration, you must send written notification. Monies paid by you will be refunded less a cancellation fee determined as of the date Toscana Saporita receives your written notice.

Cancellation and Refund fees are:
90 – 75 days prior to course date, monies can be refunded less an administration fee of $ 1,000 – Euro 1,000
Cancellation less than 75 days prior to course date results in 100% of the amount is not refundable.





Travel Arrangements – Toscana Saporita is located about 10 miles from Pisa International Airport which has direct flights from Rome, Milan and most other major European cities. Our driver will pick you up at Pisa Airport, or Pisa Train Station but arrival information must be provided at least two weeks ahead of time. This service is included in the price.
Pick ups will occur at both Pisa Airport and Pisa Train Station at the following times –
Sunday: Pisa Airport at 12 NOON and at 4 PM. Our driver will meet you at the ARRIVAL (inside the airport) with a sign with the name of the school on it.
Pisa Train Station – at 12,30 PM and 3,30 PM. Please exit the station and turn left towards McDonald’ s. Our driver, will pick you up in front of it.
Delays / Cancellations
If you experience delays or cancellations while en-route to the school, please call Sandra Lotti (Sandra’s Mobile (011-39) 335 812-9442) and advise her of your delay.
Saturday Departures:
Our tour guides will will take you back to either Pisa Train Station or Pisa Airport. This service starts at 8,00 am and ends at 11,00 am. As a reminder, Pisa Airport is about 25 minutes far from the school with no traffic. You need to be at the airport at least 2 hours prior to your flight. The Station is approx 20 minutes far from the school with no traffic. For early departures we wil be happy to help you arrange a cab. This service in NOT included in the price you pay. For further questions, please inquire with your booking agent.


Dress code


Dress is casual but you are required to wear closed toe shoes during lessons (no open-toed shoes – sneakers are fine) and wear shirts with either short sleeves or with sleeves that can be rolled up. We suggest you bring clothing you can layer should it be warmer or cooler than the expected ‘usual’ temperatures; a lightweight jacket or sweater is always suggested. If you are joining us during the summer months a bathing suit is a must – the pool is fabulous!

The Truffle Hunt

Your week includes the unique experience of hunting for truffles and enjoying a truffle lunch. On the day of the hunt we leave in the morning for Savini Tartufi, the family truffle company that coordinates our hunt.
You will learn about the history of this three-generation family business, how the truffle hunting dog is trained and meet the hunter. Our group will follow the hunter and his dog into the forest, so you get a first-hand look at a truffle dog sniffing out truffles, and the hunter gently removing the soil to disclose these aromatic culinary treasures.
After the hunt we will follow the hunter and his dog back to the Savini Tartufi truffle company where we will savor a three course truffle lunch. Before heading back to Toscana Saporita you will also have the opportunity to purchase the truffle products made on site.
This could be a once-in-a-lifetime experience. Just one more thing that makes Toscana Saporita one of the best cooking schools in the world.

The Advanced Course builds on Toscana Saporita’s years of successful culinary instruction, having taught so many people the fundamentals of Tuscan cuisine. It all takes place on a charming country estate where for a week at a time, guests ”live like true Tuscans”, living in fully updated 17th-century rooms and enjoying leisurely meals on the estate’s sun-drenched lawn.
Advanced Fundamentals of Tuscan Cuisine

Hands-on instruction for advanced home cooks and professionals.
Five days of intensive hands-on instruction in the advanced fundamentals of Tuscan cuisine using professional equipment. All 32 hours are taught by Sandra Lotti and her staff of chef instructors.

Skills taught include:
-Pasta shapes and how to marry them with sauces, plus the effective use of different flours and recipes
-Pasta sauces and fillings, including the essential ”soffritto” method for making Tuscan sauces
-Basic sauces and soups
-Fish: cleaning, boning, filleting and preparation
-Chicken: boning, quartering, stuffing and preparation
-Pastry, cakes and custards, doughs and breads. (Includes puff pastry, pate à choux and pasta frolla)
-Vegetables: carving, stuffing, preparation
-Meats: lamb, hare, wild boar; how to roast, deep-fry and braise

Other highlights:
-Wine, cheese, truffle and olive oil tastings
-White truffle hunt with an experienced truffle hunter and a truffle tasting lunch menu at Savini Tartufi
– Wine tasting and lesson with Emiliano Alessi from the celebrated Cennatoio Winery in Panzano in Chianti
