Come join us and enjoy a 13 hours intense baking program and discover bakers’ best kept secrets. Work with a 60 year old starter, creating amazing breads, focaccia, pizza, brioche, croissants, puff pastry and more!

What Is Included In The Price

The bread course runs every week starting from the week of April 26th until the end of June and then again in September until the end of October, and can be taken alone (4 hours every afternoon) or in conjunction with the regular program (working in the morning AND baking in the afternoon)

Included in the price: accommodation with self contained bathroom, all meals, wines/beer/coffee/tea (with lunch and dinner), transfer from and to Pisa (railway station or airport), 13 hours of hands on lessons, one jar of our 60 yrs old starter. On Thursday, those who prefer to leave in the afternoon and join us for the Truffle hunt can do so by adding $120 per person. This includes the truffle hunt with dog and hunter and a three course truffle based meal. Please inquire about availability.

We HIGHLY recommend Trip insurance as we never cancel any classes, even if we have 1 student only attending. A $600 non refundable deposit is needed at the time of the booking. For more information on prices and schedule, please email Alessio at [email protected]

Schedule

Each student will make their own recipes from scratch (breads, focaccia, pizza, puff pastry, rolls, baguette, doughnuts, breakfast quiches and pastries, brioche, croissants and generated recipes) and will be given ingredients and equipment in order to produce every item. Recipes will be provided at the end of the week. Arrival on Monday morning. Lunch will be served at 1:15 PM. From 3:00 PM to 7:00 PM hands on Lessons. At 7:30 PM Dinner. Tuesday morning Breakfast. At 1:15 PM Lunch. From 3:00 PM to 7:00 PM Lessons. At 7:30 Dinner. Wednesday morning Breakfast. At 1:15 Lunch From 3:00 PM to 7:00 PM Lessons. At 7:30 PM Dinner. Thursday morning Breakfast and Transfer to Pisa airport/train station.
